I followed this recipe as written, which is to say…I used all the ingredients listed. I know my children will not eat several of the ingredients so I just had everything laid out and warmed the tortillas, smeared on the hummus, and let them top as they liked. One had just hummus and feta (who doesn’t like feta?) but at least she didn’t balk at eating a spinach tortilla!
One word of note on these: They don’t keep well. You can’t make them and send in a lunchbox, for example. The ingredients are just too wet for a tortilla to keep its shape more than a few minutes. I would say that you could put the ingredients together like a salad though (without the hummus) and eat with pita chips for lunch. Maybe. 🙂
