This recipe comes from Simply Recipes, which is hands down my most favorite food blog EVER! You must check out their site and spend some time looking around. I promise, you won’t be disappointed. Many of the recipes we try are from that site, mainly because they can be trusted to provide accessible ingredients, easy methods, and amazing results. This one is no exception.
I followed this recipe exactly, except for the sauce. I did not make my own tomatillo sauce as called for in the recipe. If it had been a weekend and I had unlimited time… No. No. Who am I kidding? I’m not going to make my own when I can buy a jar of Herdez salsa verde. It’s good. Really good. And it doesn’t require me to peel, broil, and blend 1 1/2 lbs. of tomatillos.
When I make this again, I might ditch the potatoes only because I love basmati rice so much. I used both, and it was just a little bit of starch overload. I absolutely loved the red bell pepper in this, though, and would add more of it in the future. The flavor of the pepper and the verde sauce was out of this world. Another winner!
