Fat Tuesday!

In honor of Fat Tuesday, we’re re-visiting an oldie but a goodie. This was one of our Top Five posts from 2016. Indulge and enjoy!

I’ve seen various incarnations of this recipe floating around the Interwebs, and it’s called everything from “fluff” or “cloud” to plain ‘ole “salad.” But around here, it’s usually referred to as “that jello stuff” or – as Eldest Son refers to it – crack. Yes. He calls it crack because it is so incredibly addictive. One bite and you’re hooked. In poor taste? Maybe. Painfully honest? Absolutely.

So here it is. My version of “That Jello Stuff/Crack.”

  • 24 ounce container cottage cheese
  • 3 ounce box of dry jello  (I love lime, Eldest Son loves strawberry.  Go with whatever flavor is your favorite.)
  • 15 ounce can crushed pineapple
  • 16 ounce container of Original Cool Whip

Mix cottage cheese and dry jello until well blended. Add in well-drained pineapple and mix well. Fold in the Cool Whip. Refrigerate for several hours or overnight.
