Tonight is technically designated as “leftovers” night, but I had some ingredients that needed to go (bacon, a leek, and spinach) so I went with this recipe to use them up.
The main selling point to this “fake” risotto recipe is that it’s quick, not like real risotto (risotto is made with Arborio rice, which has to cook for awhile).
This is just as good.
A few changes I made:
– thick-cut bacon instead of pancetta
– about ½ cup chopped leek instead of 2 cups (plus about ½ cup chopped white onion I had lying around the kitchen)
–1 tsp dried thyme instead of 1 TBSP fresh
–2 cups Minute Rice (makes maybe 3-4 cups cooked) instead of 2 8.8-oz pouches precooked rice
–1/2 of a 5-oz box of fresh baby spinach (calls for 5 oz) **I’d say this needs chopping before you add it**
This is a very forgiving recipe and has a yummy sauce to go with it. If you think about it, just cook rice, add anything you like (meat, vegetables), make it creamy with some good sauce like this and-voilà!
