Tortilla Soup

Here we go with my version of Emeril’s Tortilla Soup.

I stick to the original recipe…

EXCEPT for the following:

  • I use original Emeril’s Essence instead of the Bayou Blast to dust the tortilla strips.
  • I leave off the avocado and cilantro.

Yes, I know those might seem integral to the recipe, but trust me; it still tastes super good.

  • I also opt for the green pepper.
  • And sometimes – like tonight – I dusted scooper chips instead of tortilla strips.

Two things you shouldn’t leave out are the dusted chips/strips and the chipotle¬†crema. Both add so much flavor to the soup, it wouldn’t be the same without them. Enjoy!
